MISSION

"According to the surgeon general, obesity is officially an epidemic; it is arguably the most pressing public health problem we face, costing the healthcare system an estimated $90 billion a year. Three of every five Americans are overweight; one of every five is obese. The disease formerly known as adult-onset diabetes has had to be renamed Type II diabetes since it now occurs so frequently in children. A recent study in the Journal of the American Medical Association predicts that a child born in 2000 has a one-in-three chance of developing diabetes. (An African American child's chances are two in five.) Because of diabetes and all the other health problems that accompany obesity, today's children may turn out to be the first generation of American whose life expectancy will actually be shorter than that of their parents. The problem is not limited to America: The United Nations reported that in 2000 the number of people suffering from overnutrition--a billion-- had officially surpassed the number suffering from malnutrition--800 million".

This is my raison d’être. The gasoline and propane that fuels my existence. My drive to transform every color and shade of folks' lives into the most brilliant hue they never knew they could shine.  

I created Ambrosia Healing to empower people and change the current food paradigm: good food tastes like kale aka rabbit food. I am one of those unique individuals that gets high off of making a stranger think kale tastes like bacon and that vegetables can actually be eaten for breakfast. 

I raise my knife for the equality of food: for the people allowed access to it and the earth used to grow its bounty. Cooking from scratch with seasonal, organic, unrefined, and local ingredients is a grassroots health revolution. It steps outside of the current paradigm that has for decades successfully increased our yearly quota ::woot woot:: of diabetes, cardiovascular disease, and death ::a silent applause for modern medicine::. 

Don't confuse my intentions, I don't equate our healthcare system with the decline of humanity. I just simply offer other models of living, eating, and breathing that could quake the ground beneath what is failing, and create canvases on which we can paint the future of what we want. 

My heart beats for the children, other pulsating versions of my younger self, that are taught pills will cure their otherwise untamable mood and behavioral disorders. 

And mothers. All of those amazing mamas that experience postpartum depression (1 in 7 by a JAMA Psychiatry study conducted in 2013) and feel isolated and unsupported, at a time when they are being branded as a failing milk factory, reduced from a human to a life-support machine. These mothers and children humble me and propel me to keep sharing other paradigms in which we understand mental illness and the alternative tools used to remedy it.

The footprint I leave in the sand for you is to spark and inspire you to connect to your body, connect to the land you live on, and connect to your local food. Beauty and health are not given to us by pills, doctors, or even vacations. We have the medicine within each of us to change ourselves and to change our world. 

Today is a unduly beautiful day to cook.
